They say opposites attract, so Chef Fred Vlachos is putting that theory to the test at Rosen Centre’s final Vine & Dine wine pairing dinner of 2012 to be held Friday, Oct. 26 at 6:30 p.m. The “Fire and Ice” themed dinner will contrast warm, spicy and smoky dishes with chilled or refreshing tastes, or those that simply evoke warmer and cooler climes, to tantalize and surprise the senses.
The five-course meal begins with an appetizer course of Chilled Oysters with Asian Mignonette and Wakame Salad, accompanied by a Domaine St. Michelle Luxe Blanc de Blancs, followed by a second course of spicy Shrimp Fra Diablo served with Squash Blossom and Goat Cheese Foam and an Eroica Riesling. A fiery yet cool Goldschlager Sorbet will cleanse the palate prior to the main course: a Smoked Duck Breast topped with Huckleberry Verjus Sauce, Sweet Potato Rosti and Sugar Snap Peas and served with Col Solare. The dessert is a perfectly themed Pumpkin and Cinnamon Cheesecake layered between gingerbread cookies topped with toasted meringue. The dessert course will be served with Inniskillin Vidal Icewine.
Each Vine & Dine event begins with a reception in Everglades Bar featuring a welcome wine or unique wine cocktail. The group then adjourns to Everglades restaurant, offering a comfortable, yet refined setting that evokes the natural beauty and relaxed atmosphere of the Florida Everglades for a multi-course gourmet dinner highlighted by fresh, seasonal ingredients and wines expertly selected to complement the cuisine. During dinner, guests may engage in casual conversation about wines with an experienced wine maker or knowledgeable sommelier chosen for each event. Guests can also enter to win exciting raffle prizes, such as bottles of wine, wine-related items or hotel stays. An intimate dining experience, each Vine & Dine event is limited to no more than 40 guests, ensuring personal attention for each attendee.
