Known for redefining Indian dining with a global perspective, Chef Valice brings a wealth of experience from acclaimed restaurants such as Indian Accent NYC, Indian Accent in New Delhi, Masala Library in Mumbai, and Daarukhana in Hong Kong. At ROOH, he is set to debut an exciting new fall menu on October 20, 2024, showcasing his innovative approach to Indian cuisine, deeply rooted in tradition and inspired by California’s freshest ingredients.
Chef Valice Francis is an internationally acclaimed chef whose culinary journey spans from the vibrant streets of Old Delhi to the prestigious kitchens of Michelin-recognized restaurants. Most recently, he served as Executive Chef at Indian Accent NYC, a restaurant listed on the World’s 50 Best Discovery list and recognized in the Michelin Guide. His career highlights include working at Indian Accent in New Delhi alongside Manish Mehrotra, widely recognized as one of India’s top chefs, and often hailed as “Best Chef in India” by international media. Chef Valice also led the kitchen at Masala Library in Mumbai, where he secured back-to-back “Restaurant of the Year” awards. Additionally, he played a pivotal role in launching Daarukhana in Hong Kong, which swiftly became one of the city’s most sought-after dining spots.
