Chef Vic Casanova’s quintessential Third Street Italian favorite, Gusto is stepping into the space previously occupied by sister restaurant Pistola. Casanova is growing Gusto from the original 35 seats to 130 seats, allowing him to enhance the menu, add a full beverage program and launch weekend brunch.

Featuring the ‘free range-Italian’ fare for which Casanova has become known, Gusto’s updated menu is representative of the restaurant’s evolution while remaining true to its original concept. In addition to classics such as Black Fusilli with garlic, anchovy, capers, black olive, tomato, chili, & oregano; and Bucatini Carbonara with pancetta, egg yolk, black pepper &scallions, new pasta additions include Pappardelle with wide ribbon pasta, oxtail ragu & parmigiana; and Rigatoni All’Amatriciana with guanciale, tomato, onion, chili &pecorino. Chef Casanova offers Piccoli Piatti, dishes designed to share, such as Cavoletti with kale, cabbage, Brussels, hazelnuts, cherries, goat cheese, & mustard vinaigrette; Fiori Di Zucca with crispy squash blossoms, ricotta, and basil tocco; Polipo with Mediterranean octopus, cannellini beans, tomato & harissa; and Local Buratta Crostini with black mission figs, local burrata & aceto balsamico tradizionale. Large plate offerings include Tagliata, American wagyu flat iron steak, arugula, parmigiano & aceto balsamico tradizionale and Branzino, grilled mediterranean sea bass, summer squash caponata & charred lemon.
