Hilton Anaheim Names Prabeen Prathapan as New Executive Chef

Hilton Anaheim is Orange County’s largest hotel. It’s steps from Disneyland® Resort and the Anaheim Convention Center. Today, the hotel welcomes Prabeen Prathapan as Executive Chef. His arrival kicks off a multi-million-dollar culinary makeover. That includes the debut of Poppy’s, a California inspired restaurant opening this summer.

Chef Prathapan arrives with nearly two decades of experience in luxury hospitality, beginning his journey in India before refining his craft at Montage Laguna Beach, the Mandarin Oriental in Las Vegas, and Balboa Bay Resort & Club. Trained in modern French techniques and driven by a passion for storytelling through food, he blends nutrition, sustainability, and seasonal sourcing to create dishes that resonate with both flavor and purpose.

Introducing Poppy’s A Celebration of California Flavors

Poppy’s will pay homage to California’s diversity and abundance by showcasing the state’s freshest ingredients in thoughtfully composed dishes. From light pastries and specialty coffees for morning guests to richly layered entrées and handcrafted desserts, every offering will reflect Chef Prathapan’s globally inspired approach and commitment to local partnerships.

Overseeing Hilton Anaheim’s Entire F&B Experience

Beyond Poppy’s, Chef Prathapan will lead Poppy’s Lounge and the Saltflower Pool Bar & Grill. He’ll also oversee banquet and catering services. His team will roll out wellness-focused menus and strengthen ties with local farms. Sustainability and guest well-being are central to his vision.
