sbe’s boutique luxury hotel, The Redbury Hollywood, and Chef Danny Elmaleh’s critically acclaimed restaurant Cleo, welcomes the addition of David Plonowski as Chef de Cuisine. Plonowski will work under the direction of Elmaleh, who launched the flagship of the globally recognized contemporary Mediterranean restaurant in the bustling Hollywood district in 2010, which has quickly become one of the staples of the Los Angeles dining scene.
Prior to joining Cleo, Plonowski helmed Santa Monica locale Joe Miller’s Spanish restaurant, Bar Pintxo, where he served as Executive Chef. During his time at the location he was awarded “Best Spanish Restaurant” by Los Angeles Magazine in 2012, was a selected Chef at the Los Angeles Food & Wine Festival in 2011 & 2012 and most recently was invited to cook as a Featured Chef at the legendary James Beard House in New York City.
Chef David Plonowski has an exceptional passion for culinary knowledge and understanding of the cultures that come with studying varied cuisines. Plonowski’s love of food came from the upbringing of cooking with his mother as a child and has expanded to exploring culinary destinations in more than seventeen countries around the world; including studying abroad in Salamanca, Spain, a four year trip that led to his first job in the quaint Café Erasmus. This influence stayed with him as he joined the restaurant Bar Celona in Pasadena as Tapas Chef upon his return to the states and has led to his devotion of expanding his wealth of gourmet expertise.
